This is a hit with everyone in my family! We love eggs, potatoes, bacon wrapped up in a nice tortilla! This healthy version allows us to have just that, and a whole lot more! Top with parm or feta if you wish (not included in recipe calc.), change up the greens , or the meat. The point is to keep it super light on the fattier meats, adding only just enough to add a little flavor of it, a hint -if you will. Let the eggs and chick peas take care of the protien portion. The newer style tortillas are just superb with this recipe! There are several kinds of them, try them all! We just love them! I've even added a few sunflower seeds to this!! LOL use your imagination!!

1 med. potato
1 slice bacon, chopped up
.5 C onion, chopped
1 clove garlic , chopped
1 cup mustard greens, chopped
3/4 cup chick peas
3 eggs
1/4 C. Milk
Salt and pepper as desired.


How Do I Make Healthy Breakfast Burrito?

Here is how you make Healthy Breakfast Burrito:

cut up bacon to little pieces, toss in fry pan on med low heat. dice potato and toss in.( Bacon will oil pan so no oil is needed) cook until potato is about half way cooked, toss in onion,garlic, greens and chick peas. heating till onions are translucent. This is where i will play around with my spices. Try a bit of red pepper flakes, or parsley flakes, maybe a touch of basil or oregano. Then, mix eggs and milk and pour in same pan. turning down heat to low, cook until eggs are cooked through (sometimes i even turn down the heat and cover with a lid. letting the steam cook the eggs). Heat the tortillas in a seperate pan, 1 at a time, turning once hot, then place on your plate and spoon about 1/5 of the mixture on top of it. (Top with a little parm or feta or maybe salsa?) Enjoy!!
