Here is how you make Simple breakfast skillet:

Cook chopped onions and peppers over med-high heat, using the bacon grease or butter or oil, till just soft and set aside. Chop potatoes and toss in the pan with the grease making sure they are well coated, add a cup of water and cover. Allow to cook until almost soft, remove cover and water if too much is in pan so potatoes will brown. Add onions and peppers back to pan and make 3 holes in this mixture to reveal pan bottom. Crack an egg into each hole, cover and cook over med heat about 4 minutes for soft set.
