Here is how you make Ambers Breakfast Sandwich:

Saute mushrooms in olive oil until done. Set aside. Add Egg Beaters to pan and cook on medium low heat until done. Add cheese and let it melt then top eggs with mushrooms, green onions, and capers. Fold egg into a square (almost like an omelet). Put onto toasted English muffin. Turn heat up to high and brown piece of ham. Put ham on top egg then top with other piece of english muffin. Enjoy!
