I used to stop at the gas station every morning and buy an egg and cheese sandwich. While I did think the calorie count wasn't bad, coming in at ~250, I thought I could make it healthier while saving money! I am not much of a multi-grain, etc. fan but the new english muffin was not hard to adjust to! The queso blanco was actually better to me than the other cheeses I am used to getting on breakfast sandwiches. Queso blanco is a melting cheese and makes this sandwich super gooey and good. My revamped sandwich comes in at ~155 calories, pretty awesome for a quick, yummy, and filling morning treat. I hope you enjoy! :)
