Drain off the grease and cool. Chop the onion and tomato. In a large bowl, add the eggs, tomatoes, onions, browned sausage, salt and pepper. Mix well. Heat oil in a large skillet, and add the egg mixture to the pan. Cover and cook on low heat about 15 minutes or until top of egg mixture is just cooked. Carefully turn the egg over and cook about 5 minutes on the other side.Cut into 6 equal pieces. Serve with toast and fresh fruit.
