I modified my sister's traditional Holiday Cake recipe for lower sugar carbs to fit our diet - I substituted 1 cup bran for the second cup of sugar the recipe called for. Mix dry ingredients including apples. Add eggs and vanilla; blend well. Pour into a greased bundt pan. Bake 50 minutes at 350 or until toothpick comes out clean.Frosting: Cream stick of butter and 8 oz cream cheese. Add powdered sugar to taste and 1 tsp vanilla extract. Add chopped pecans last or put on top of frosted cake. Drain the cherries on paper towels. Frost cake when cool.
