This morning went for a long walk with my husband. On the way back we stopped at Starbucks - I had a decaf coffee and he had a sausage and cheese breakfast muffin. He offered me a bite but with enormous willpower I declined. When we got home I made this recipe to emulate the flavors of the less healthy breakfast muffin he ate without all the fat and calories. You can add any veggies you like or have on hand (onions would be good!). Let me know what you think !

3 cups egg substitute (or 1 dozen egg whites)
3 tbsp parmesan cheese
0.5 cups chopped or small broccoli florets
2 patties Morningstar Farms Grillers Vegan Burger (can also use turkey sausage but this is all I had on hand)
1 cup sliced mushrooms
salt and pepper to taste

Here is how you make Egg Sausage and Cheese Breakfast Cups:

Preheat oven to 350 degrees.Coat a non-stick muffin pan with cooking spray.In a non-stick skillet cook the mushrooms (medium-high heat) until cooked down, then drain excess fluid. Add vegan sausage and broccoli, cook about 5 minutes until warm. Note: if you use turkey sausage you will need ensure the sausage is cooked through so may want to cook this separately. Let the mixture cool slightly.Put the sausage mixture into the cups first then pour stirred egg substitutes on top until cup is 3/4 full (they will rise so don't overfill). Sprinkle with the cheese and salt & pepper.
