Brown 2 ounces of the breakfast sausage in a non-stick pan. Whisk together 1 whole egg and 8 egg whites. Scramble eggs in a pan sprayed with cooking spray. Divide eggs and sausage evenly between the four flour tortillas. (It is about 1/3 c of eggs and 1 tablespoon of sausage) Sprinkle each tortilla with 2 tablespoons of cheese.
