Preheat a waffle iron as directed.Mix eggs, milk, olive oil, pancake or coffee syrup, and vanilla extract in a medium bowl using a wire whisk. Beat until the mixture is thickened and creamy. Add coconut flour, flaxseed meal, baking powder and salt. Let set for several minutes as the mixture will thicken. Spray the waffle iron with non stick cooking spray and cook waffles according to the waffle iron directions using 1/4 cup-1/3 cup per waffle.
