Warm a nonstick pan while you mix the batter.Add flour, sugar, eggs, and about half the milk to a bowl and whisk to remove lumps. Add vanilla, cinnamon, and remaining milk continue to whisk to make a nice thin batter. Pour 1/4 batter into prepared pan swirling pan to spread batter thin, flip after about 3 min or when edges no longer stick. Makes 4 crepes. Fill with lowfat cream cheese and top with fresh fruit.
