Prepare your griddle with a light spray of Pam (or something similar) and place over medium heat.1. Combine first three ingredients in medium mixing bowl.2. Beat eggs and buttermilk together in separate bowl. Add butter and honey.3. Form a "well" in your dry ingredients and then pour in the wet. With a wisk, combine ingredients until flour is just moist. DO NOT OVERMIX. I would say no more than 6-7 light strokes.4) Reduce heat to medium-low. Using a trigger or spring-loaded ice-cream scoop, drop batter onto hot griddle.
