Saute the veggies with the cooked sausage. Salt veggies to taste if desired. Spray 2 muffin tins with olive oil Pam. Spoon sausage-veggie mixture evenly into the 24 cups. Add 1 TBS shredded colby to each cup.Whip eggs and salt to taste (I use 1/2 tsp). Add a few cranks of fresh black pepper.
