Sprinkle a dash of sea salt on the pan. I prefer to use a cast iron pan that has been cured.Dice and saute' all veggies. i use whatever I have leftover but prefer the ones listed in this recipe. Set aside veggies in a bowl. Crack an egg in a cup (to make sure it's "clean".) Add two more whites only and scramble. spray pan again as needed but lightly. Sprinkle a dash of seal salt to help prevent sticking. make sure your pan is medium hot and pour in scrambled raw egg mixture. let it set until almost cooked and then "flip" it over in the pan. As this side is cooking, quickly and paprika, pepper, flax, saute'd veggies, and cheese on one half of omelet. Flip over empty half of egg onto the veggies,etc... Serves one very big filling healthier omelet.
