3/4 cup Fresh Broccoli, finely chopped
1 cup Fresh Spinach
2 cloves Garlic
3/4 cup Red Onion
1/4 cup Shredded Cheddar Cheese
1/8 tsp Pepper

Here is how you make Egg White Omelette (Adapted from "Biggest Loser Cookbook"):

In a non-stick skillet, cook garlic, onion and broccoli until onion becomes somewhat tender. Add spinach and cook until just wilted (about 2 minutes). Remove vegetables from skillet and put in bowl. Set bowl asideIn a small mixing bowl, add pepper to egg whites. Whisk egg whites until they just begin to froth a little. Pour in a small, non-stick skillet and cook (lift up edges as they cook, tip pan to allow liquid to run underneath and cook). Once set, flip the omelette. Get bowl of veggies and sprinkle on top of omlet. Sprinkle with cheese. Fold omelette in half and cover skillet, allowing cheese to melt.Remove from heat. Salt to taste.
