Preparation:Bake 2 small potatoes for about 1 hour. Once cooled, cut potato into 1 inch pieces. Beat 1 egg and 11 egg whites. Cook Turkey Bacon and pat down with paper towel. Cut turkey bacon into 1/2 Inch pieces once cooled.Dice onions into 1/4 inch squares and carrots into 1/4 inch pieces.Cooking Time: Saute onion and carrots with margarine over a medium heat. Combine bacon, eggs, and potatoes with the carrots and onions in a non-stick pan. Cook and fold eggs as if it were scrambled eggs.
