I love Migas, which is a Mexican egg dish that is insanely popular in Central Texas, but it's not very healthy, so I came up with a great alternative. Traditionally, they are made with tortilla chips scrambled in with the eggs (added right at the end), but I leave those out since I have cut fried foods out of my diet.

Spray a small skillet with pam, and add salsa over medium heat. Cook for about a minute, then add eggbeaters. Scramble those together until cooked. Sprinkle cheese on top and serve. Serve with your favorite tortillas (not included) and make tacos. Delish!These are not included in the nutritional info, but here are some yummy add-ons:I add about a quarter of an avocado, sliced, on top.I also serve with fat free refried beans, or black beans, and brown rice (instead of the traditional Mexican rice).Some people like potatoes instead of rice. I don't really eat white potatoes anymore, but if you do, they are excellent with hash browns or roasted red potatoes.
