2 fresh peaches, finely chopped

Here is how you make Low fat whole wheat blintzes:

Whole Wheat CrepesCombine egg, oil and milk. Mix well. Add salt and flour. Stir well. Let batter sit while you make cheese filling and fruit topping.Cheese FillingIn a blender process cheeses, sour cream, vanilla, honey and splenda till smooth.Fruit toppingCombine peaches and sugar and let stand till peaches get juicy.Stir crepe mixture again--lumps should mostly disappear and batter will be thin. Spray skillet with non-stick spray and heat over medium high heat. Start oven at 425 degrees. Spray 9 X 13 pan with non-stick spray. Using a scant 1/3 c. of batter, pour into skillet. Tilt skillet to let batter run to make crepe thin. Cook till crepe is dry looking on top. Turn over and cook slightly on bottom. Put crepe on a plate.No need to re-spray skillet. Start another crepe cooking. Put 2-3 T. of cheese filling on crepe and fold ends in and roll like a burrito. Place in baking pan. Keep cooking crepes and filling as you go. Should make about 12 crepes. When all are cooked and rolled, heat in oven for 10 minutes. Serve with fruit topping. Can also use jam, or canned or frozen fruit for topping.
