Melt coconut oil and honey together on very low heat for about 3 minutes, stirring constantly. Stir vanilla extract into coconut oil and honey mixture. Pour this mixture over the dry ingredients and fold in until all dry ingredients are well coated. Transfer to a baking sheet lined with a silicone baking mat (or grease the baking sheet well).
