When the edges have firmed up and there is just a little jiggle left in the center of the omelette, sprinkle the other ingredients over the surface of the eggs. Let cook one minute, then ease one side over to make a half circle. Put a lid on the omelette and turn off the flame. Let sit while you assemble two plates (or only one if you're a big eater). The residual heat should have been just enough to soften the other ingredients.
