2 medium Idaho Potatoes, baked and chopped
2 Tbsp olive oil, divided
8 oz finely diced honeybaked ham
2/3 cup chopped sweet onion
1/2 tsp thyme
1/8 tsp black pepper
2 cups egg substitute (I use better 'n eggs)
1/3 cup chopped green bell pepper


How Do I Make Hash it Out?

Here is how you make Hash it Out:

Bake potatoes in oven OR Microwave for about 5 minutes per potato. Rinse in cold water to stop further cooking. Dice up potatoes, chop onions and green peppers. Heat 1 Tbsp of oil in a large skillet (iron cast works best for browning potatoes) over medium heat; saute onion until translucent (approx 4 minutes); add green peppers and cook another 2 minutes. Add potatoes and remaining oil and cook until lightly browned; Add ham, thyme and pepper. Add egg substitute and mix so that the whole thing resembles scrambled eggs.
