1 teaspoon lemon rind, gratted

How Do I Make Billberry Jam?

Here is how you make Billberry Jam:

In a large heavy saucepan, combine berries, rhubarb, lemon rind & juice, and water. Bring to a boil, stirring frequently, reduce heat & simmer, very gently for 10 minutes. Add sugar, increase heat to high & boil vigorously, stirring often. After about 20 minutes, test jam for setting by putting a small amount on a cold plate & pushing it gently with your thumb. If it wrinkles, it’s ready.Remove form the heat, skim off foam, & stir for 3-5 minutes to suspend fruit evenly throughout the jam. Fill sterilized jars & seal.Makes 7 to 8 half pint jars.
