4 cloves garlic, chopped

3 cups rinsed and finely chopped kale, stems removed
1 egg
3/4 C liquid egg white
1/2 C egg substitute
salt and pepper to taste

Here is how you make Kale Frittata:

Saute onion over medium heat, stirring often. Add garlic, saute for another minute. Add ground turkey and cook another 5 minutes (approximate), until cooked through, making sure to break up turkey clumps. Add kale, reduce heat to low and cook covered for about 5 more minutes. Season with salt and pepper, if desired. Stir. Beat egges, season with a pinch of salt and/or pepper, and pour on top of mixture evenly. Cook on low for another 2 minutes without stirring.Put under preheated broiler in middle of oven, about 7 inches from the heat source, on low, so it has time to cook without the top burning. When it gets firm it is done, about 2-3 minutes.Serving Size:?Makes 4 servings
