*Preheat oven to 400 degrees*While oven is preheating, combine all the dry ingredients together. You can save some pecans to add to the top, for a little extra crunch.Crack egg and slightly beat it, then combine wet ingredients. Then mix them all together, just enough to wet all the dry ingredients, don't over blend.In muffin/cupcake pan spray with non-stick cooking spray and line with cake liners. And fill 3/4 of the way.Cook for 15-20 minutes or until top is golden brown.
