Adapted from the applessauce oatmeal muffin recipe I saw here on spark recipes. I wondered what it would be like if I used the leftover granaola we had and we have just at one cup....so I tossed it in rather than the oatmeal. Also right off the bat, the applesauce SHOULD have been 1/2 cup but I messed up and did a whole cup and these figures account for that.

Here is how you make apple orchard muffins:

Makes 12 muffinsSoak 1 cup Kashi Apple Orachard Granola in 1 cup skim milk for 1 hour.Preheat oven to 400 degrees.Combine Kashi mixture with applesauce and egg.In another bowl combine dry ingredients and whisk together until mixed.Combine wet and dry ingredients and combine until jsut mixed. If you over mix the muffins will be rubbery, and you don't want that!!Spray muffin tin with nonstick spray and fill 3/4 full.Bake at 400 for 15 minutes (time may vary in your oven so start checking at the 10 minute mark!!) This recipe makes 12 muffins.Note: You can drop the calorie count by using splenda in place of sugar, 2 egg whites or egg substitute for the whole egg, and the original recipe called for 1/2 cup of unsweetened applesauce. I just used what I had and apparently got overenthusiastic about the idea of applesauce because I used an entire cup.....lol.
