Preheat oven to 425 degrees. In a bowl cream softened butter and sugar until fluffy. Beat in the egg until light and fluffy. Beat in applesauce. Stir together flour, baking powder and salt. Add to the butter mixture and stir just until moistened. Spoon into 12 greased mini-muffin cups (about 1 3/4-inch diameter). Bake for about 15 minutes or until golden brown.
