1 tsp. baking powder
1/2 tsp. salt
1/2 cup crushed pineapple, drained
1/2 cup shredded coconut
1/3 cup flax meal
1/4 cup oat bran
1/2 cup raisins or cranberries

Here is how you make Awesome Bran Muffins:

1. Preheat oven to 375 degrees. Line muffin cups with paper liners.2. Mix together wheat bran and buttermilk; let stand 10 minutes.3. Beat together oil, egg, sugar and vanilla. Add to buttermilk/bran mixture. Stir together flour, baking soda, baking powder, salt, flax meal and oat bran. Stir into buttermilk mixture until just blended. Fold in pineapple, coconut and cranberries (or raisins). Spoon batter into prepared muffin tins.4.
