Position rack in center of oven. Preheat to 350 degrees. Spray 24 mini-muffin cups with non-stick cooking spray.In a large bowl, whisk together wheat bran, flours, and baking soda. Set aside.In medium bowl, combine buttermilk, sugar, applesauce, egg, oil, and vanilla. Beat until frothy - about 2 minutes on high. Make a well in middle of dry ingredients and pour in buttermilk mixture. Stir with a spoon until combined. Gently fold in cranberries and walnuts. Do not over mix.Divide evenly among the muffin cups. Bake until the tops spring back when pressed gently in the center - about 18 minutes.
