Pour the boiling water over it and let stand while assembling the other ingredients. Mix in the remainder of the cereal with the applesauce, sugar, Splenda, eggs and buttermilk. Mix together the flours, soda and salt. Combine all your ingredients. Cover and store in the refrigerator. Spray muffin tin, and if you use paper cups, spray those lightly too, these stick like crazy if you don't!These come out better if you let them sit in the fridge for a while, and up to a week.Bake in a 400 degree oven for about 20 min. Cool and enjoy!I also made waffles with this batter, froze them for toaster re-heating.
