Here is how you make Lighter Bran Muffins:

Preheat oven to 375 degrees. Grease muffin tins or line w muffin liners. Mix together wheat bran and soy milk, let stand 10 minutes.Beat together melted butter, applesauce, egg whites, sugar and vanilla and add to soy milk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into milk mixture, just until blended. Fold in raisins and spoon into prepared muffin tins.Bake in preheated oven for 15-20 minutes or until toothpick inserted in the center of a muffin comes out clean. Serving Size:?Makes 12 Muffins
