Delicious high protein, high fiber muffin to grab and go! It also makes a great quick bread. I modified this from the recipe on the back of a bag of chia seeds I got awhile ago. My husband calls these our "seedy" muffins, our preferred alternative to the seed rolls at Whole Foods. These are more dense, contain a lot more seeds and fiber, and are moist, not chewy.
