Mix wet mix into dry mix--don't stir too much yet!! Add in chopped chives, the real bacon, and about a quarter cup of the mexican blend. you may have to add in a little more milk at this point if it is too thick.Dollop about 2/3 of the way up into muffin tins. Top equally with remaining mexican cheese. Bake in 350 degree oven for about 15-20 minutes, or until toothpick comes out clean.
