I adapted this from a recipe in Cooking Light. The original recipe called for all white flour, buttermilk, butter, and 2 tea bags and said it made 12 muffins. Preheat oven to 375 degrees2. In large bowl mix flours, brown sugar, baking powder, baking soda, salt3. Cut open chai tea bags and add to flour mixture; stir well to mix4. In another bowl mix soy milk, coconut oil, egg and vanilla extract5. Add to flour mixture, stirring just until moist. Do not over mix6. Coat muffin tin with non-stick cooking spray (or use liners coated with cooking spray).7. Divide bater into muffin cups. Note the recipe values are based on a yield of 9 muffins, you will have to adjust if you make a different quantity.8. Sprinkle nuts evenly over the muffins9.
