2 Medium Ripe bananas, mashed
15 oz can pumpkin (not pumpkin pie mix)
1/2 cup unsweetened applesauce (The amount wasn't listed in the copy of the recipe I have, so I'm just guessing... you may want to add more or less...)
2 eggs, slightly beaten
1 tsp vanilla
2 tsp pumpkin pie spice
1 cup granulated sugar (Splenda, recipe/ calories are amounts are calculated based on using Splenda)
1/4 cup safflower oil (canola would work too)
2 cups whole wheat flour
1 cup oat flour or oat bran
1 tsp baking powder
1 tsp baking soda
dash of salt
optional raisins and nuts, add a 1/2 cup of each, or chocolate chips.

Here is how you make Bananakinapple muffins:

Preheat oven 350 deg, line muffin pans w/ foil liners or spray nonstick pan. In lg bowl, mash bananas, add pumpkin, applesauce, eggs, vanilla, pumpkin pie spice, sugar & oil, mix by hand or w/ mixer til well incorporated. In separate bowl mix dry ingredients; ww flour, oat flour, baking soda, baking powder, & salt. Add dry ingredients to wet ingredients & mix gently til blended. Fill muffin cups w/ med scoop, bake approximately 20 min or til they spring back to the touch. Makes 24 muffins. These freeze nicely. Add some raisins &/or nuts as well.
