Put yeast, warm water and sugar into a bowl and let it sit for about 10 minutes until it becomes slightly foaming. While it is sitting, mix together flours, salt and cinnamon.Add the milk to the flour mixture, blending well, and add this mixture to the yeast bowl, incorporating both mixes together. Add the raisins to the batter and fold in. The batter will be lumpy. Put a towel or plastic wrap over the bowl and let the batter sit for about 45 minutes to an hour. Heat your skillet or griddle to low-medium heat, and drop batter by slightly less than 1/4 cupfuls onto the hot surface. Flip when the bottoms begin to brown. The inside of the english muffin will be doughy, but should be cooked. You'll know it's done when the english muffin is still soft but has browned. Remove from the pan, plate up, and set out with butter or jam or any topping you like! You could also sub the raisins for chocolate chips, nuts, or other dried fruits.
