75g (2 1/2 oz) unsalted butter
250g (1 3/4 cups) self-raising flour
1 1/2 tsp baking powder
75g (1/3 cup) granulated sugar
200ml (7 fl oz) milk (I used 2%)
1 egg
200g (2 cups) blackberries


How Do I Make Woodland Muffins?

Here is how you make Woodland Muffins:

Preheat oven to 400F/200C/fan 180C/ gas 6. Line a muffin tray with muffin cases and set aside. (I didn't have any liners so I just used cooking spray.)Cream together the sugar and butter. In another bowl, beat together the milk and egg. Then slowly add into the creamed sugar and butter, mixing all the while.Next add the flour and baking powder, mixing until you get a batter that is a little lumpy, you don't need it to be too smooth.Then tip your blackberries into another bowl and squish a few with a fork so you have some that are whole and some broken down, this will make a nice ripple effect in the mix. Gently mix the blackberries in with your batter and then pour into the muffin cases and bake in the oven for about 20 minutes. (It took mine about 16 minutes)Remove to a wire rack and allow to cool before serving.Serving Size: Makes 12 muffinsNumber of Servings: 12Recipe submitted by SparkPeople user LIBRADRAGON.
