1 c. sugar
1 tsp baking powder
.5 tsp baking soda
.5 tsp salt
1 large egg, lightly beaten
2 Tbsp canola oil
2 Tbsp unsweetened applesauce
2/3 c. Tropicana 50 Orange Juice (or similar low-sugar OJ)
2 cups FRESH cranberries (coarsely chopped)
2 tsp orange zest
.25 tsp orange extract (optional)
.25 tsp vanilla extract

Here is how you make Low Fat/Low Cal Cranberry Orange Muffins:

Preheat oven to 400 degrees. Line muffin pan with paper muffin cups or spray each cup with cooking spray. Meanwhile, in a large bowl, combine the dry ingredients (flour, baking powder, baking soda, salt and sugar). Mix with a whisk. In a small bowl, add lightly beaten egg, oil, applesauce, orange juice, zest & orange & vanilla extract). Stir well. Make a well in the flour mixture and add wet ingredients. Stir until just moist, being careful not to overmix. Fold in chopped cranberries. Spoon batter into prepared muffin pan, filling cups about 1/3. Bake for 16-18 minutes, until muffins are golden.
