I always struggle to meet my protein goals and so added a little kick to these muffins with some protein powder and I reduced the fat.

Here is how you make Gingerbread PowerProtein Muffins:

Pre-heat oven to 35O.Mix milk and vinegar and whisk for 1 minute to begin the thickening and curdling process.Sift together dry ingredients and make a well in the center.Add all the wet ingredients (except the honey) to the dry ingredients and mix just until the entire mix is wet, no more.Spoon into muffin cups. Fill each halfway for 12 muffins.Bake for 20 minutes or until a toothpick or knife comes out clean.Use a toothpick to prick 10 small holes in the top of each muffin while they are still warm and spread 1/2 tsp. of honey onto the top of each (the holes help the honey to sink into the muffin).Serving Size: Makes 12 Small Muffins (or 6 Large Muffins at 216 calories each)Number of Servings: 12Recipe submitted by SparkPeople user SERAH_MOZ.
