Revised an old recipe to make them more nutritious. You can use your mixer with it's dough hooks or use your bread machine on dough mode. Years ago I used a 1# coffee container with the ends cut out for the cutter. This time I used some "egg circle shapers" I bought at Bed Bath and Beyond. A 2 1/2" round cutter is preferred if you have one available. You might want to substitute molasses, honey or brown sugar for the sugar.

4-5 C. whole wheat bread flour
1/2 C. dry skimmed milk
1 egg, beaten
3 Tbs. butter
1 tsp. salt

Here is how you make Julie's Two Grain English Muffins:

Place the cracked grains in a saucepan and cover them with cold water. After bringing them to a boil, simmer for 1 minute, drain, and cool to lukewarm.In a small bowl combine one-half cup of the water, one teaspoon of the sugar or sweetener and the yeast. Let stand until bubbly, about two minutes.In large bow, stir together the remaining one cup water, three tablespoons of the sugar, two cups of the flour, cooked grains and milk powder. Add yeast mixture and beat well. Add beaten egg, butter and salt. Add two to three more cups flour to make a soft dough. Knead with your mixer or by hand on floured board 10 minutes. Place in a greased bowl, cover, and let rise until double in bulk, about one hour.Carefully turn dough out onto floured board. Roll out gently to about 3/4 inch thick, being careful not to break air bubbles. Sprinkle with corn meal. Cut with 2-1/2 inch cutter into rounds. Place cutouts on sheets of parchment paper, let rise, covered until light, about 45 minutes or until double in size.Brown on an ungreased griddle over medium high heat (315 degrees) about 4-6 minutes each side.
