Here is how you make Cranberry-Lemon Almond Muffins:

Preheat Oven to 375 degrees. Spread almonds on baking sheet and bake for 5-7 minutes or until light brown. Remove and let cool.In a medium bowl, combine yogurt, applesauce, egg, vanilla, lemon zest and sugar. Whisk until combined. In a separate bowl combine flour, baking soda, and salt. Combine both bowls together and stir just until combined. Stir in craisins and almonds. Pour into paper-lined muffin tins and bake for 20-25 minutes or until a toothpick inserted in center of muffin comes out clean. Let rest for 5 minutes, then transfer to a baking rack for 10 minutes.
