"Preheat oven to 400 degrees F. Lightly grease muffin tin.In a medium bowl, add oats and milk to soak together for 15 minutes, so the oats can soften.While the oats are soaking, in a separate bowl combine the flour, ground flax seed, whole flax seeds cinnamon, baking powder, baking soda, and salt.To the soaking oats, stir in the beaten egg, sugar, oil, and vanilla extract.Once the 15 minutes has elapsed for the oat mixture, add the dry ingredients and stir until well blended.
