1/4 c egg whites
1/2 c unsweetened applesauce
6 oz plain or vanilla greek yogurt
6-8 oz fresh strawberries, chopped
2 tbsp chia seeds

Here is how you make Protein Strawberry Oatmeal Muffins:

Preheat oven to 425 degrees. Line a muffin pan with cupcake liners, and lightly spray with nonstick spray.Place the oatmeal, protein powder, and baking powder in a food processor(or something similar). Process until the oatmeal is the consistency of flour. Pour the mixture into a medium bowl. Add the chia seeds to the blended mixture, and stir to mix them in. Add the chopped strawberries and gently fold into the flour mixture to coat the strawberries.In a large mixing bowl, mix the egg substitute, applesauce, greek yogurt, and sweetener(if using) with a whisk.Pour the flour mixture into the wet mixture. Gently fold to combine until all the liquid is absorbed and evenly combined.Bake at 425 for 5 minutes.
