2 cups plain yogurt--I use low-fat
1/4 cup coconut oil, melted
1/4 unsweetened applesauce
1 cup Sucanat
2 eggs
2 cups whole wheat flour
2 teaspoons salt
1 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon cardamom
1 teaspoon nutmeg
1 cup chopped walnuts
2 cups grated apples--I don't peel them

Preheat oven to 400 degreesStir oats and yogurt together in large bowl, let sit while you assemble the other ingredients.Sift dry ingredients together (not the sucanat).Stir one at a time into rolled oat & yogurt mixture: eggs, then oil & applesauce, then sucanat. Mix well.Add dry ingredients, nuts, & grated apple.Stir gently, don't overmix.Spoon batter into muffin tins, I use paper wrappers, otherwise grease your tins first.Bake 25 minutes, or until toothpick comes out clean.Serving Size: makes 24 muffinsNumber of Servings: 24Recipe submitted by SparkPeople user CEHALLA.
