2 T Baking Powder
1 T Pumpkin Pie Spice
1.5 C Walnuts
2/3 lb Baby Carrots, shredded
1 C Dark Brown Sugar
1 Can Libby's Pumpkin Pie Mix
1 C Egg Substitute or 4 Eggs
3 +/- C 1% Milk (firm consistency, not too runny)

Here is how you make Really High Fiber Muffins:

Shred carrots, place in a small bowl and add 1 cup of brown sugar. Stir and let sit. Mix all dry ingredients in a large bowl. Mix Pumpkin, Egg Subsititute and Milk in blender. Add to dry ingredients. Add carrot/brown sugar to dry ingredients. Mix. Let sit for 5 minutes. Add milk if needed to obtain firm, not runny, consistency. Fill muffin tins (spray with Pam) to top (will not rise much).
