The ingredients for Empire State Muffins are:

2 cps Shredded tart apples
1 1/3 cup granulated sugar
1 cp chopped fresh or frozen cranberries
1 cp shredded carrots
1/2 cp chopped walnuts
2 1/2 cp. flour
1 TBL baking powder
2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
2 eggs slightly beaten
1/2 cup canola oil


How Do I Make Empire State Muffins?

Here is how you make Empire State Muffins:

In a large mixing bowl, combine apples and sugar. Gently fold in cranberries, carrots and nuts. Combine dry ingredients; add to fruit mixture. Toss to moisten dry ingredients. Combine eggs and oil; add to fruit mixture and stir just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Bake at 375 for 20-25 minutes until muffins test done.
