Here is how you make Sweet Quinoa Muffins:

Cook quinoa following package directions. Drain and let cool.Preheat oven to 375 degrees F, then spray a 12 cup muffin pan. Whisk flours, baking soda, baking powder, cinnamon and salt in a medium bowl.Whisk bananas, eggs, honey, buttermilk and vanilla in a large bowl. Stir in dates, then flour mixture and quinoa.Spoon into prepared muffin cups. Sprinkle with coarse sugar. Bake until toothpick inserted into center of a muffin comes out clean, 15 to 18 minutes. Let cool in pan for 10 minutes. Remove from pan and let cool completely.Variation: Instead of raisins, try dates, dried cranberries, or chocolate chips.
