1 cup blueberries, fresh or frozen
Grated zest of 1 lemon or orange
1/4 cup vegetable oil (or applesauce or 1/2 each)
2/3 cup 1% buttermilk or lowfat yogurt
1 large egg (can use 1/4 cup egg substitute)
1/4 tsp rum extract or 1/2 tsp rum
1/2 cup walnuts or pecans
Optional--can replace blueberries with 1/2 c diced apples and 1/2 cup carrots, can add 1/2 c raisins or currents.

Mix the dry ingredients together. Add blueberries, zest of lemon and walnuts or pecans. Whisk the oil, buttermilk or yogurt, egg and rum extract together n a small bowl. Add the liquid ingredients to the dry ones and mix well, but do not overbeat. Preheat the oven to 400 degrees.Fill greased or paper lined muffin cups about 3/4 full or slightly more. Place on cookie sheet in the oven, bake for about 25 minutes or until edges of the tops begin to turn brown. Remove and cool.
