Here is how you make Muffins - As You Wish Muffins:

Preheat oven to 400. Put baking cups in muffin pan. Spray with Pam. Put flour, Splenda, baking powder, salt and connamon in bowl. Stir with wooden spoon to mix. Crack egg into another bowl. Add milk and oil (and optional 1 tsp vanilla). Whisk together.Add wet ingredients to dry and mix until just combined. Spoon 1 tbsp into each muffin cup. Top with 1 tsp apricot preserves. Spoon remaining batter over top of preserves.Bake 15-18 minutes or until tops lightly brown. Let stand for 10 minutes, then turn out of muffin pan. Serve warm. Makes 12 servings.
