Here is how you make Baked Nectarines and Cream Oatmeal:

1. Preheat oven to 350 degrees F. Spray an 8"x8" baking dish with cooking spray. Mix 1 Tbsp milled flaxseed with 3 Tbsp water and let sit 5 minutes.2. Mix oats, brown sugar, baking powder, cinnamon and salt in a medium bowl. Whisk the milk, flaxseed mixture, maple syrup, melted butter and vanilla.3. Scatter nectarines in bottom of prepared baking dish. Pour oat mixture evenly on top. Pour milk mixture on top and press to submerge all of the dry ingredients in the liquid. Arrange sliced nectarines on top and sprinkle with a pinch of cinnamon.4. Bake for 35-40 minutes until set. Let rest 10 minutes before serving.
