3 teaspoons ground cinnamon
4 teaspoons ground ginger
4 tablespoons maple syrup
4 1/4 cups milk -- use whatever you like. I used Silk Light soy milk
2 eggs
1 cup canned pumpkin puree
1 cup unpacked raisins
1/2 cup ground flaxseed

Here is how you make Baked Oatmeal with Pumpkin and Raisins:

Preheat oven to 350 degrees. Spray an11x7 pan with vegetable oil spray. In a medium bowl, mix oats, cinnamon, ginger, raisins, and flaxseed.In another bowl, mix maple syrup, milk, eggs, and pumpkin. Add this mixture to the dry ingredients and mix to combine.Pour mixture into baking dish and bake, uncovered, for 40-45 minutes or until set. Cool for 5-10 minutes, run a silicone or rubber spatula around the edge of the pan to loosen baked oatmeal. Turn the oatmeal onto a plate, then cut it into 12 pieces.Serving Ideas : Warm in toaster oven or microwave oven.
