2 Tbsp. Sweetener
1/4 Tsp. Ground Cinnamon
1/4 Tsp. Salt
1/2 Tsp. Baking Powder
1/2 Tsp. Baking Soda
2 C. Old Fashioned Oats
1.5Tbsp. Chocolate Chips (I used Hersey Special Dark.)
1/4 C. Unsweetened Light Shredded Coconut
2 Large Egg Whites
1 1/4 C. almond milk, unsweetened
1/4 C. Samoa Coffee Creamer (Or sub for more milk.)
6oz FF vanilla greek yogurt (or plain or coconut)
6tsp sugar free caramel




How Do I Make Overnight Baked Samoa Oatmeal?

Here is how you make Overnight Baked Samoa Oatmeal:

Combine wet ingredients (minus the caramel) in one bowl and dry ingredients(minus the chocolate chips in another. Add dry to wet and stir until combined. Pour mixture into a 8x8 prepared pan, cover and put in the refrigerator overnight. In the morning, sprinkle the chocolate chip over the top and press down lightly. Cover with foil. Bake at 350 for 20 minutes. Remove the foil and bake an additional 25 minutes or until the middle is no longer jiggly. Remove from the oven and allow to cool slightly. Cut into 6 squares. Drizzle with 1T of caramel per slice when ready to serve.
